Blueberry Morning Glory Baked Oatmeal is a wholesome, nutritious baked oatmeal recipe that’s reminiscent of morning glory muffins!
Good morning! I can’t think of a nicer way to greet you after a holiday weekend than with this wholesome, hearty Blueberry Morning Glory Baked Oatmeal.
The title has the words rise and shine written all over it, so it’s the perfect way to start the day. It completely made me excited to get out of bed!
I’ve loved morning glory muffins forever, so I decided to create a delicious spin. Needless to say it was devoured by everyone in the house!
If you’ve never had a morning glory muffin, they include grated apple and carrot, and often contain raisins, nuts, and coconut.
It’s very similar to carrot cake flavors, which I find irresistible.
I decided to swap out the raisins for fresh blueberries, and they’re so much better than raisins in this baked oatmeal.
Blueberries are my favorite breakfast fruit hands down. I love them in my oatmeal, pancakes and smoothies.
They way those plump blueberries burst and ooze all over this baked oatmeal only makes it more inviting too, doesn’t it?
The grated carrot and apple add a slightly chewy texture to this baked oatmeal, which I love. On top of that, we have pecan pieces and coconut flakes all toasty and golden brown, which gives this a nice crunch factor.
This morning glory baked oatmeal is just packed with so many things I love. 🙂
How to make this baked oatmeal recipe
- Preheat the oven to 375 degrees. Grease an 8×8″ baking dish with cooking spray.
- In a medium bowl, combine the oats, coconut, apple, carrot, baking powder, cinnamon, and salt. Set aside.
- Whisk together the milk, maple syrup, egg and vanilla in a small bowl. Set aside.
- Arrange 1/2 cup of the blueberries along the bottom of the baking dish. Pour the oat mixture over the top of the blueberries evenly. Pour the milk mixture over the top of the oat mixture as evenly as possible. Rap the baking dish on the counter a couple of times to evenly distribute.
- Top the oatmeal with the pecans, remaining blueberries, and coconut flakes.
- Bake 35-45 minutes or until golden brown and set. Cool on a wire rack and serve.
Recipe notes
- You may use frozen blueberries, just be sure to thaw them slightly.
- The baked oatmeal may be baked in advance and stored in the refrigerator for up to 5 days. Just heat and serve!

I have a total thing for oatmeal too … it’s in HEAVY rotation for breakfast at our house! This baked oatmeal sounds delicious – love the use of coconut milk in it. I need to try that!
The coconut milk made this oatmeal SO creamy and dessert-y. That’s not a word, but that’s how it tasted!

Is there a difference in coconut milk in a can and coconut milk in the half gallon boxes that’s by the regular milk? Which one did you use?
I used the coconut milk in the can, but the one in the box will work great too! You could use almond milk or any non-dairy substitute. Hope that helps, Pam!

Such a genius idea to replace the raisins with blueberries! Fresh blueberries taste incredible when they’re baked and imagining them with all of the other textures and flavors is making my mouth water. I wish every morning could start with a beautiful bowl of this oatmeal!

Yes — that’s actually what I used here! Just thaw them slightly and blot gently with a paper towel to avoid excess liquid.
