Blueberry Overnight Oatmeal Parfait

Blueberry Overnight Oatmeal Parfait is the easiest, nutritious way to start your day!  Rolled oats set in coconut milk overnight in the fridge, so in the morning they’re soft, rich, and creamy.  Layer them with a luscious blueberry compote, and you’ve got a breakfast that tastes more like a treat.   These oats are perfect for warm summer mornings, and for breakfast on the go.

Today is a very special day.  Not only am I sharing my new favorite breakfast, but I’m honored to be guest posting for my friend Mary Frances over at The Sweet {Tooth} Life while she’s on vacation.  I’ve been following her blog for quite some time, and I’m in awe over how someone so young can be so knowledgeable about food!  I love her mix of healthy and indulgent recipes, and I’m really learning a lot from her about preparing dairy-free and vegan foods.  While I don’t follow dairy-free, gluten-free, or vegan diets specifically, I enjoy preparing recipes along those lines because I feel like I can always use less dairy, gluten, and animal products in my diet.  Healthy eating is definitely in my repertoire, so The Sweet {Tooth} Life  is a great place to be. 🙂

Now, on to this Blueberry Overnight Oatmeal Parfait.  It’s the easiest of easy, nutritious, and absolutely delicious.  Have you ever made overnight oats?  It’s simply mixing a 1:1 ratio of old fashioned rolled oats with the milk of your choice.  Mary Frances is lactose intolerant, and she told me that I didn’t have to create a dairy-free recipe for her guest post.  The truth is, I love using dairy-free milk, especially coconut, so I was more than happy to share a dairy-free recipe today that she could enjoy, too.  The oats set in the coconut milk in the fridge overnight, and the next day you wake up to the richest, creamiest oats with a delicious coconut flavor.  Who needs dairy? 😉

If you haven’t ever had overnight oats, maybe your skeptical about cold oatmeal?  I was, but I’m so glad I tried it.  There are some things I just don’t like cold as much — soup, coffee…and I was afraid oats would fall into that category.  The cold temperature didn’t bother me one bit, and it’s perfect for warm summer mornings.  I only made enough for one serving because I was trying them out for the first time.  I had no idea how much I would love them, and now I’m completely hooked.  I know Mary Frances enjoys creating recipes in single serving sizes on occasion, so I thought these would be right up her alley. 😉  I love that you can scale it down, or make a big batch for the whole family to wake up to.

You can sweeten the oats up any which way you like, but I chose a dash of brown sugar and some cinnamon to spice them up a bit.  I could’ve stopped there, but I had some homemade blueberry compote in the fridge calling my name.  It was the perfect thing to take these oats over the top — parfait-style — and who doesn’t love a beautiful layered parfait?  The blueberries made these oats so indulgent that they seemed more like a treat than a healthy breakfast.  I topped the parfait off with fresh blueberries and toasted coconut flakes, to give this parfait freshness and crunch. It’s got everything you want in a breakfast without the guilt!

These overnight night oats are great layered in a mason jar or container, so they’re perfect for that breakfast on the go.  The hardest part will be not devouring them immediately, and you may find yourself digging in at a traffic light before you get to work or school.  Make yourself a blueberry overnight oatmeal parfait and see if you can make it out the front door without inhaling it.  I know I can’t. 🙂
