Since my kids went back to school over a month ago, I’ve been on a mission to create wholesome, make-ahead breakfasts and snacks that they’ll love.  

While I love to bake muffins or make slow cooker oatmeal or energy bars, sometimes life gets too busy and I need to turn to brands that I trust to help me out.  

These Chocolate Raspberry Cheesecake Yogurt Parfaits are the perfect example of that, and they’re multitaskers, as they’re great for both breakfast and snacks.

When I’m out and about, I’m always on the lookout for products that are great to have around when I’m having meal prep emergencies.  I love shopping at Target because I always find so many brands that I love at much more affordable prices.

A few weeks ago I was shopping at Target and scooped up some Wallaby’s Organic Greek Yogurt in Vanilla Bean and Strawberry flavors, as well as Van’s Simple Delicious Gluten Free Granola in Double Chocolate and Banana Nut flavors.  

I’ve loved these brands for a long time because they’re certified organic, non-GMO, and gluten free.  Both brands have a nice variety of products and flavors and are wholesome foods that naturally fit my family’s lifestyle.  

They’re products that I feel good about feeding my family, which is what it’s all about. 🙂

What I love about these products is that the breakfast and snack possibilities are endless…so endless I had a hard time deciding what I wanted to create.  

I finally narrowed it down to these Chocolate Raspberry Cheesecake Yogurt Parfaits, which were a nice change from the typical yogurt parfaits that I make.  If you hang out around here enough, you know that I love my cheesecake, and lightening it up no-bake cheesecake style is one fun way to enjoy it.  

What’s more fun than cheesecake for breakfast? 🙂

I chose to use Wallaby’s Organic Greek Yogurt in Vanilla Bean because it’s such a versatile flavor, and I beat it with some low fat cream cheese.  

These two ingredients are all we need for our no-bake Greek yogurt cheesecake since the yogurt is already sweetened and flavored perfectly.  

It really doesn’t get much easier than this.

No bake cheesecake parfaits with rapsberries

I layered the parfaits with Van’s Simply Delicious Double Chocolate Granola, which is the perfect sweetness and so chocolatey, and added some fresh raspberries to the mix because they’re the perfect complement to cheesecake and chocolate!

One bite of these parfaits, and I was hooked.  My boys felt exactly the same way, and I can’t wait to make more.  

The options are endless as you can change things up with different flavors of yogurt, granola, and fruit.

Chocolate Raspberry Cheesecake Yogurt Parfaits

Chocolate Raspberry Cheesecake Yogurt Parfaits are layers of no bake Greek yogurt cheesecake, double chocolate granola, and fresh raspberries. They're perfect for breakfast or snacks!

Ingredients

  • 2 5.3 ounce containers Wallaby's Organic Vanilla Bean Greek Yogurt (about 1 cup)
  • 4 ounces cream cheese softened
  • 10 ounces Van's Simple Delicious Double Chocolate Gluten Free Granola
  • 1 pint fresh raspberries

Instructions 

  • Place the yogurt and cream cheese in a small mixing bowl and beat together until smooth.
  • Layer the parfaits in (4) Mason jars beginning with the granola, followed by the Greek yogurt cheesecake filling and raspberries. Serve immediately or store in the fridge until ready to use. Enjoy!
