Greek Three Bean Salad
Greek Three Bean Salad is classic 3 bean salad with a Greek twist! It’s packed with protein, veggies and is the perfect side dish or lunch!
I’m soaking up summer already. My boys have been out of school for a week already and it’s been really nice having them home. They’re older now, so I don’t have to worry about finding activities for them to do like I did when they were younger.
We used to spend so much money on camps to keep them active, and I always worked hard to coordinate time for them to spend time with friends and go places so that we didn’t all get stir crazy.
Now that they’re in high school, they have the high school sports camps/practices to keep them busy, and they certainly don’t need me coordinating time to hang out with their friends anymore.
I’m thankful that I have a job that allows me to work from home so I can be here with them during the summer. And I have some taste testers during the day which is really useful, too. 🙂

A few years ago I posted this Fresh and Easy Three Bean Salad and it’s been pretty popular around here. I love that salad, so it was hard to imagine making it better. Those fresh green beans and that maple vinaigrette….so good.
As much as I love that classic version, this Greek Three Bean Salad is better. It’s three-bean-salad-transported-to-the-Mediterranean better.
Greek Three Bean Salad
When I went to Greece years ago, my favorite salad was the farmer’s Greek salad, or horiatiki. There was no lettuce anywhere in sight — just the freshest tomatoes, cucumbers, and red onion tossed with salty feta, briny kalamata olives, red wine vinegar, olive oil and oregano.
This salad is a combination of horiatiki and three bean salad. I swapped the classic vinaigrette with my Easy Greek Salad Dressing for the ultimate flavors of the mediterranean.

How to make Greek Three Bean Salad
I haven’t even mentioned how ridiculously easy this three bean salad is to make. The green beans are blanched for 3 minutes until crisp tender. They’re tossed in a large bowl with all the other ingredients and that lip smacking greek salad dressing.
It really doesn’t get any easier, and the best part is that it can be made in advance.
This 3 bean salad recipe is perfect to enjoy as a side dish for BBQs, picnics, and makes the perfect light, healthy lunch.
Eating healthy has never, ever tasted so good. 🙂
Recipe tips and substitutions:
- Be sure to not to cook the green beans too long so that they retain their bright green color.
- The dressing and veggies may be prepped in advance, and you can also assemble it a few hours ahead of time.
- The salad keeps well in the fridge and is a great meal prep lunch or dinner.
Greek Three Bean Salad
Ingredients
- 8 ounces fresh green beans trimmed and cut into 1-2" pieces
- 15 ounces chick peas rinsed and drained
- 15 ounces kidney beans rinsed and drained
- 16 ounces cherry tomatoes halved
- 1/2 english cucumber coarsely chopped (about 1 cup)
- 1 bell pepper cored and chopped (I used half red and half yellow)
- 1/2 cup chopped kalamata olives
- 1/2 cup chopped red onion
- 4 ounces crumbled feta cheese
- [Easy Greek Salad Dressing]
Instructions
Prepare the salad:
- Fill a medium sauce pan with water and bring to a boil over high heat. Add the green beans and cook for 3 minutes or until cooked to the desired level of doneness. Drain well.
- Place all salad ingredients in a large bowl and set aside.
- Add the desired amount of dressing and toss to combine. Serve and enjoy!

- The dressing may be made in advance and stored in an air tight container in the fridge.
- The salad may be assembled a few hours before serving.
