Healthy Weekly Meal Plan 10.1.2016
Happy October! It feels strange typing that, but that’s exactly where we are. I’m putting my Halloween decorations out today, so that should help me wrap my head around the fact that it really is October. I’ve been scooping up baby pumpkins and gourds like crazy because I love having them around the house. The colors are so festive and really get me in the fall mood!
You know what else will get me in the fall mood? This week’s recipes! There’s chili, soups, and so much comfort food going on. My butternut squash galette isn’t health food with the pastry crust, so consider that a splurge this week! All of the other recipes are healthy, thankfully, so we’ll just roll with that. Prep Tips: If you are not lactose intolerant, you can use heavy cream in place of the Lactaid (lactose-free cow’s milk). With heavy cream, I start with just a ½ cup. Feel free to add more if desired.
