Mini Phyllo Strawberry Brie Bites
Mini Phyllo Strawberry Brie Bites are mini phyllo shells filled with strawberry jam, brie cheese, and baked until warm. Â Top with fresh sliced strawberries!
Remember the strawberry jam that I shared with you on Monday? Well let’s just say we’re putting it to good use today.
These Mini Phyllo Strawberry Brie Bites are crisp phyllo shells filled with plenty of my homemade strawberry jam, chunks of brie, and they’re topped with fresh strawberries.
These little bites are addicting, and I definitely ate my fair share of them. 🙂
I created these bites for my friend Izzy at She Likes Food because it’s her virtual baby shower today! Izzy is having her first child very soon, and I’m thinking since it’s a boy, maybe I should’ve made blueberry brie bites? That’s no matter, I suppose.
The point is that I wanted to create a delicious spring appetizer for her virtual shower, and I know Izzy loves cheese so I can’t go wrong there.

These bites were inspired by a friend of mine. I went to her home for dinner recently, and she served some mini phyllo shells filled with brie and topped with a fresh raspberry. She mentioned that her daughter used to be a caterer and everyone requested these bites. I ate a few and knew I had to come up with my own version here.
Now, I love baked brie as much as the next person, but I definitely prefer it when it’s not wrapped in pastry dough. That’s a little over the top for me on most days, not to mention that it’s pretty messy.
These strawberry brie bites are just perfect because the phyllo shells are crispy and light, and so much more low calorie than pastry dough.
We’re saving our calories for that brie, aren’t we? 🙂
Obviously brie is as indulgent as cheese gets, but when you have just a couple of little chunks in these phyllo shells you get just the right amount — even if you have a few you’re not going completely overboard. I’ve told you how much I love cheese plates with jam and fruit, which is why I love these bites so much!
These brie bites are the perfect sweet and savory bites for any special occasion. Can you imagine any appetizer being more of a hit? I really can’t, and they’re so easy to make that you have absolutely no excuse not to. 🙂

Mini Phyllo Strawberry Brie Bites
Ingredients
- 15 mini phyllo shells thawed 10 minutes
- 1/2 cup strawberry jam
- 4 ounces brie cheese rind removed and cut into chunks (you may not need all of it)
- 8 fresh strawberries hulled, halved, and sliced thinly widthwise
Instructions
- Preheat the oven to 350 degrees. Place the thawed phyllo shells on a rimmed baking sheet and fill each shell with a heaping teaspoon of jam and top with 2 chunks of brie.
- Bake for 3-4 minutes or until the cheese has melted and the edges of the phyllo shells are golden brown.
- Remove from the oven and top with about 3 strawberry slices, fanning slightly. Serve immediately and enjoy!
Notes
- The strawberry jam and strawberries may be substituted with your favorite flavor jam and fruit!

I agree – as much as I love baked brie it can get so heavy with the dough all around it!! I like the idea of little pop-able phyllo bites much better!! And especially with that jam!!

This recipe looks delicious, but you really, REALLY need to cool it on these ads. I tried to open this recipe a dozen times on my phone without clicking anything, and could not even look at it before it redirected to multiple ad sites every single time. Completely unusable, and I could not even read the recipe. I had to go get my computer with adblock and it blocked no less than 27 pop ups and ads. I understand the need to make money all too well, but it should not come in jeopardy of a usable site.
