Drumroll please…..we’ve got the Top 10 Recipes of 2015!
I always love putting this round-up together because the recipes here are the ones that you the readers love the most. It’s important for me to know what recipes you’re looking for, and I think this round up sums it up nicely — 30 minute meals and healthy breakfasts/snacks seemed to rule this year. I’m really happy that you liked the 30 minute meals that I put up this year, because I really worked hard to fill that void. I’m also working harder to bring you less-complicated recipes because in the past it wasn’t always that way.
We need uncomplicated, fresh food fast…or let’s just call it fresh and easy fast food?
In 2016 I’ll continue to bring you dishes with plenty of fresh, seasonal produce, because that’s my true passion. More 30-minute meals…check. More overnight breakfasts…check. And fun spins on classic dishes…check. 2016 is going to be a great year filled with good food, and I hope you stick with me. I’m not surprised this did so well, because not only do people love cornbread, but they love zucchini! And if you’ve got a garden, you love finding new ways to use it. This, my friends, was one delicious way to use it, and the zucchini moistened up this cornbread so perfectly. With crispy skillet edges, no less.
This was my first attempt at energy bites with dried fruit, and since I’m not a huge fan of dates, I went to my go-to…dried apricots. They’re sunny, bright, and full of flavor, and guaranteed brighten your day. And give you more energy along the way. 🙂
These oats were my #1 fall breakfast, especially since we had a very warm fall here in CA. These oats have all the flavors of fall, and are the perfect no-finger-lifting breakfast ever.
Oh boy was I happy with this dish. There’s no pasta to boil, it’s prepped completely in advance and kept in the fridge overnight. Bake it off the next day, and you’ve got dinner perfection that nobody is going to complain about.
Apparently I’m not the only one that gets tired of plain old mashed potatoes. Who knew adding Greek yogurt, cheese, and baking them in the oven could result in really exciting mashed potatoes? I know now, and there’s no going back.
This dinner right here is what I consider to be the perfect dinner. Salmon is my favorite fish, I love the sweet and savory thing more than words can express, and it’s done in 30 minutes! And that creamy coconut rice is ah-mazing.
Forget the take-out — this is so much more fresh and flavorful, and you know exactly what’s going in here. No MSG, sweetened only with honey, and it’s ready in 30 minutes! What more could you possibly ask for, except maybe a side of rice.
This meal is one of my favorites. It’s loaded with spring veggies and the pasta cooks right in the skillet, absorbing the liquid and becoming extra creamy. One pot, 30 minutes, and dinner is served.
This breakfast is special…that’s all there is to it. It takes regular baked oatmeal (which is great anyway!) and takes it to a new level. This is a baked oatmeal/fruit crisp hybrid that you can set up the night before and bake the next day for that special breakfast or brunch. This is almost like dessert and is nothing short of amazing.
Clearly you love overnight oats as much as I do…and overnight blueberry breakfasts! These oats are a breakfast powerhouse with rolled oats and chia seeds, and they also happen to be vegan, gluten, and dairy free. They’re the perfect way to start your day — healthy, delicious, and no work required.
