I love hosting a family brunch, but I’m not one to slave over a hot griddle flipping pancakes or making bacon and eggs to order.

For me, it’s all about recipes that not only feed a crowd, but they can be made entirely in advance like sheet pan pancakes and french toast casserole.

And instead of flipping or scrambling a bunch of eggs, I always opt to prepare them in a breakfast casserole or these Mini Crustless Broccoli Quiche!

Brunch just doesn’t get much easier or more delicious.

I highly recommend using silicone baking molds, because they make it much easier to remove the crustless mini quiche. A link to the ones I use is included in the recipe, but if you prefer to use a muffin pan, be sure to grease the cups generously with cooking spray!
