Summer is rapidly coming to an end, so we need to squeeze as many outdoor gatherings into the next few weeks as possible.  I can’t think of a better weekend to do that than Labor Day can you?

We’ve all got busy lives, but that doesn’t need to stop us from relaxing and enjoying a beautiful long weekend with friends and family.  With a menu that’s nearly effortless, yet delicious and memorable, it’s completely attainable.

That’s where these Easy Sausage, Pepper and Potato Foil Packets come in.  They take 10 minutes to put together and they’re packed with amazing flavor.

These packets include my garden grown red and yellow bell peppers, red onion, fingerling potatoes, and most importantly –>  Klement’s Smoked Bratwurst.  The bratwurst is smoked to perfection, and is the perfect compliment to the fresh summer produce!

The great thing about these packets is that you can customize them with your favorite vegetables, herbs, and spices.  They’re extremely versatile!

Foil packet meals are great for the grill, but you can also bake them in the oven.  Just pop them on a baking sheet so they’re easy to remove.

When the packets are done, allow to cool for a couple of minutes and carefully open the packet to release the steam before eating.

Easy Sausage, Pepper, and Potato Foil Packets

Easy Sausage, Pepper and Potato Foil Packets are grilled or oven baked and on the table in 30 minutes!

Ingredients:

  • (8) sheets foil 14″ long
  • (4) Klement’s Smoked Bratwurst
  • 12 fingerling potatoes (about 3/4 lb.), halved and quartered depending on size
  • 1 red bell pepper, cored and sliced
  • 1 yellow bell pepper, cored and sliced
  • 1 red onion, halved and sliced along the lines
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon chopped fresh thyme or 1 teaspoon dried
  • 1 1/2 tablespoons pure maple syrup
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Directions:

  1. Preheat the grill to medium or the oven to 425 degrees.
  2. Place 4 of the sheets of foil in a row and place the other 4 over the top of them creating a double layer for each packet.
  3. Place all ingredients in a large bowl and toss until well combined.  Divide evenly among the 4 pieces of foil.
  4. For each packet, fold over one long side to the middle, then the other.  Fold over the top and bottom and pinch together to seal.
  5. Grill or bake for 20 minutes.  Remove from heat and allow to cool for a couple of minutes.  Open carefully to release the steam and enjoy!

Recipe Notes:

  • This meal may be customized with your favorite spices or veggies, and is easily scaled to make more (or less) packets.
  • If baking in the oven, place the packets on a baking sheet for easy removal.
