Easy Sausage Foil Packets

Summer is rapidly coming to an end, so we need to squeeze as many outdoor gatherings into the next few weeks as possible. I can’t think of a better weekend to do that than Labor Day can you?
Whether you’re camping, hanging out at a park or your own backyard, these Sausage Foil Packets are the perfect meal for your Labor Day gatherings!
We’ve all got busy lives, but that doesn’t need to stop us from relaxing and enjoying a beautiful long weekend with friends and family. With a menu that’s nearly effortless, yet delicious and memorable, it’s completely attainable.
That’s where these Easy Sausage, Pepper and Potato Foil Packets come in. They take 10 minutes to put together and they’re packed with amazing flavor.
These packets include my garden grown red and yellow bell peppers, red onion, fingerling potatoes, and most importantly –> Klement’s Smoked Bratwurst. The bratwurst is smoked to perfection, and is the perfect compliment to the fresh summer produce!

Foil packet meals are great for the grill, but you can also bake them in the oven. Just pop them on a baking sheet so they’re easy to remove.
When the packets are done, allow to cool for a couple of minutes and carefully open the packet to release the steam before eating.

Easy Sausage Foil Packets
Ingredients
- 4 Klement's Smoked Bratwurst
- 3/4 pound fingerling potatoes halved and quartered depending on size
- 1 red bell pepper cored and sliced
- 1 yellow bell pepper cored and sliced
- 1 red onion halved and sliced along the lines
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic minced
- 1 tablespoon chopped fresh thyme or 1 teaspoon dried
- 1 1/2 tablespoons pure maple syrup
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Preheat the grill to medium or the oven to 425 degrees. and prepare (8) 14" sheets of foil.
- Place 4 of the sheets of foil in a row and place the other 4 over the top of them creating a double layer for each packet.
- Place all ingredients in a large bowl and toss until well combined. Divide evenly among the 4 pieces of foil.
- For each packet, fold over one long side to the middle, then the other. Fold over the top and bottom and pinch together to seal.
- Grill or bake for 20 minutes. Remove from heat and allow to cool for a couple of minutes. Open carefully to release the steam and enjoy!
Notes
- The bratwurst may be substituted with your favorite sausage.
- Customize these packets with your favorite potatoes, veggies and spices!
- These foil packets may be assembled in advance and cooked just before you’re ready to eat.

It’s been way too long since I’ve made anything in foil packets! This is perfect for the end of summer, Marcie. I love the sausage and pepper combination. Sounds just perfect to throw on the grill and have a hot and delicious meal!

This weekend you will definitely be able to find me outside on a cozy porch chair parked right next to the grill. ALL weekend. I ain’t moving. Lol. 😉 We still grill all the time during the fall, but there is something about Labor Day that just requires ALL the grilled eats, right? And these packets are just perfect, Marcie! I’m still so impressed with how well your garden does, Marcie! I tried to start a small one after we moved but the only thing that survived was basil, lol. GA weather is a little trickier than CA.
