  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper

  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons brown sugar
  • ½ teaspoon mustard powder
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • pinch cayenne pepper
  • Rolls, for serving
Smoky Orange Barbecue Sauce:
  • ½ cup ketchup
  • 2 tablespoons orange or clementine juice
  • 1 teaspoon grated orange or clementine zest
  • 2 teaspoons honey
  • 1 teaspoon Worcestershire
  • 1 teaspoon soy sauce
  • 1 teaspoon molasses
  • ½ teaspoon mustard powder
  • ¼ teaspoon liquid smoke
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • pinch cayenne pepper
  1. Rinse the pork roast and pat dry with paper towels. Place the sliced onions on the bottom of your slow cooker. Combine the brown sugar, paprika, 1 tablespoon kosher salt, and ground black pepper in a small bowl. Rub the spice mixture over the entire roast. Place the roast in the slow cooker on top of the onion layer.
  2. In a medium bowl, combine the vinegar, 1 tablespoon Worchestershire sauce, brown sugar, mustard powder, garlic powder, ½ teaspoon salt, and cayenne pepper with a whisk. Pour ⅓ of the vinegar mixture over the pork roast. Place the lid on the slow cooker and cook the roast on low heat for 10-12 hours. Cover the remaining vinegar mixture and refrigerate. About ½ hour before the roast is done, pour another ⅓ of the vinegar mixture over the roast, and re-cover.
  3. When the roast is done, remove the meat and onions from the slow cooker and place in a large bowl. Shred the meat, and pour the remaining vinegar mixture over the meat, mixing it in gently.
Prepare the Smoky Orange Barbecue Sauce:
  1. In a small bowl, combine the ketchup, orange juice, zest, honey, Worcestershire, soy sauce, molasses, mustard powder, liquid smoke, onion powder, garlic powder, and cayenne pepper with a whisk. Warm the sauce a bit in a small saucepan or in the microwave. Mix in the meat, or serve alongside.
