Southwest Turkey Chili Stuffed Delicata Squash is hearty Southwest turkey chili stuffed in roasted delicata squash. Top with cheese and cilantro for one delicious fall meal!

Serves: 4 stuffed delicata, with chili left over
Ingredients
For the squash:
  • 1 tablespoon extra virgin olive oil
  • (2) delicata squash, halved lengthwise, seeds removed
  • salt and pepper, to taste.
For the chili:
  • 1 tablespoon extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 1 clove garlic, minced
  • 1 lb. lean ground turkey
  • 2 tablespoons chili powder
  • 1 teapoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 cup fresh or frozen corn (thawed if frozen)
  • (1) 15 oz. can tomato sauce
  • (1) 15 oz. can black beans, rinsed and drained
  • ¼ cup chopped fresh cilantro
  • juice of ½ lime
  • cheese, cilantro, and lime wedges for serving (optional)
Instructions
Prepare the squash:
  1. Preheat the oven to 375 degrees. Coat the squash with the olive oil, and sprinkle with salt and pepper. Place cut side down on a rimmed baking sheet and roast for 20-30 minutes, or until soft. Set aside.
Prepare the chili:
  1. Heat the olive oil in a large saute pan or Dutch oven over medium heat. Add the onion and cook 5-8 minutes or until softened and translucent. Add the garlic and spices and cook 30 seconds. Add the ground turkey and break up with the back of a wooden spoon, stirring to coat with the spice mixture. Cook 5-8 mintues or until no longer pink.
  2. Add the corn and saute 1-2 minutes until softened. Add the tomato sauce and black beans, and bring to a boil. Reduce heat and simmer on medium low 10-15 minutes for the flavors to meld.
  3. Remove from heat and stir in the cilantro and lime juice.
  4. Fill the delicata squash with the chili, and serve with optional toppings if desired. Enjoy!
Notes
There's enough chili to stuff about (8) delicata, so if you're serving more people, roast (4) delicata squash instead of (2). I ate the leftover chili in a bowl!
