I’ve been on a mediterranean blitz lately with no sign of slow down in sight.  I’m always in the mood for Greek food, but summertime is the best time for it.  It’s tomato and cucumber season, which means Greek salads and tzatziki until my garden has no more.

And the main course?  Greek Chicken Skewers {Souvlaki} are always a favorite.

Greek Chicken Skewers {Souvlaki}

Chicken souvlaki has always been one of my favorite Greek dishes.  Authentic chicken souvlaki recipes include chunks of chicken marinated in lemon juice, garlic, olive oil and oregano, then it’s grilled to tender, flavorful perfection.

Souvlaki may also be beef or lamb, and it’s almost always served with Greek Tzatziki Dip.  Souvlaki and tzatziki go together like peanut butter and jelly — I just can’t eat souvlaki without it.

Chicken souvlaki salad is also a delicious way to enjoy these skewers!

What’s the difference between a gyro and souvlaki?

A gyro is basically pita bread filled with souvlaki meat, onion, tomato and tzatziki.

That means that these Greek Chicken Skewers {Souvlaki} are the main ingredient of a gyro.  Serve the skewers up with warm pita bread, tzatziki, onion and tomato and you’ve got yourself a gyro!

Omit the pita bread for a wonderful low carb, high protein option. 🙂

How long should I marinate my chicken?

The key to tender, flavorful chicken breast is marinating it as long as possible.  Cut the chicken into chunks before marinating for maximum coverage, and toss it in your marinade.

I recommend marinating the chicken for at least 2 hours, but it’s best for several hours or even overnight.

Recipe Tips/Meal Prep Options

Toss the cubed chicken with the marinade and freeze until you’re ready to use it.  The chicken will marinate as it defrosts!

Chicken may be skewered up to a day in advance — simply bring to room temperature 1-2 hours before grilling to ensure even cooking.

The chicken may be substituted with beef or lamb!

Greek Chicken Skewers {Souvlaki}

Ingredients

  • 1 1/2 lbs. boneless skinless chicken breast, cut into 1" chunks
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lemon (about 2-3 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced (or 1/2 teaspoon garlic powder)
  • 1 teaspoons dried oregano
  • (4) 10" wooden or metal skewers

Instructions

  1. Season the chicken with salt and freshly ground black pepper to taste and place in a medium bowl or large zip top bag.
  2. Add the lemon juice, olive oil, garlic and oregano, then toss the chicken in the marinade until well coated. Marinate for a minimum of 2 hours or overnight.
  3. About 1-2 hours before cooking time, remove the chicken from the refrigerator and skewer onto the wooden or metal skewers and let stand at room temperature. The chicken will cook more evenly when it's grilled at room temperature.
  4. Preheat the grill to medium high heat. Reduce the heat to medium and grill the chicken for about 3 minutes on each side or until grill marks form. Remove from heat and serve with lemon wedges and Greek Tzatziki Dip.
  5. Enjoy!

Notes

  • The longer you marinate the chicken the better as the results are more flavor and very tender chicken!
  • This recipe is easily scaled to feed a crowd and the skewers may be assembled up to a day in advance.
