Happy St. Patrick’s Day!  We’re all enduring a difficult time right now, but hopefully you’ll still be able to celebrate the day with the ones you’re the closest to today.

Every year I prepare a traditional Irish feast of Corned Beef and Cabbage and Irish soda bread for my family, just the way my mom did when I was growing up.

I secretly look forward to the next day when I can make Corned Beef Sliders with the leftover beef.  They’re the very best part, and I think my family would agree. 🙂

How to make this recipe

These sliders couldn’t be easier to make, and each component may be done in advance.

  • Prepare the corned beef.  The beef may be prepared in your Instant Pot or slow cooker by following the instructions in my Corned Beef and Cabbage recipe.  This may be done up to a day in advance.
  • Prepare the coleslaw.  Shred the cabbage yourself or use a 12 ounce bag of organic coleslaw blend.  Toss the cabbage in my Coleslaw Dressing or buy your favorite store bought brand.
  • Assemble the sliders.  Place slices of corned beef on the bottom slider roll, then top with coleslaw.  Spread horseradish or whole grain mustard on the top slider roll and place on top.  Secure with a toothpick.  You can also create a slider bar for parties or gatherings with a variety of spreads.

Corned Beef Sliders

Corned Beef Sliders are slices of tender, Guinness braised corned beef topped with crisp coleslaw on a slider roll.  They're perfect for gatherings or using up leftover corned beef!

Prepare the corned beef:

  • Place the Guinness, water and brown sugar into the pot and stir. Add the onion, followed by the corned beef and the spice packet. Cook the corned beef in the Instant Pot or Crock Pot according to the instructions for this Corned Beef and Cabbage recipe.
  • When the corned beef has finished cooking, allow to rest for 10 minutes. When cool enough to handle, slice against the grain.

Assemble the corned beef sliders:

  • Spread some whole grain mustard or horseradish on the top slider buns. Place the corned beef on the slider buns, top with coleslaw, and place the top half of the bun over the coleslaw. Secure with toothpicks, serve and enjoy!
