Healthy Seasonal Meal Plan Week 11
I hope you had a great holiday week! My vacation was nice and relaxing and I’m ready to get back to work next week. I’m especially excited to get back to my normal eating routine! I had my share of ice cream and eating out starts to get old after a while.
This week’s meal plan is full of delicious dishes that I can’t wait to prepare this week. I’ve missed my grill terribly so a couple of these recipes reflect my need to grill. 🙂

Prep the dressing and veggies in advance. If you use the Chickapea pasta you don’t need to add any protein as there’s plenty already. If you use regular pasta, serve with beans or grilled meat for added protein.
One Pot Teriyaki Rice with Chicken and Broccoli by Life Made Sweeter
This meal comes together quickly but to make it go even faster, prep the chicken and veggies in advance. You can even use leftover chicken.
Spiralized Sweet Potato Enchilada Bowls by She Likes Food
Prep the veggies in advance. I’ve even seen spiralized sweet potatoes sold at whole foods in the produce department, which would really save time!
