Healthy Seasonal Meal Plan Week 22

The arrival of fall yesterday has me very excited for things to come.  Mostly food things like autumn squash, persimmon, and apples.  All I want to do is make soup, chili, and comfort food despite the fact that the weather is still on the warm side.

This week’s meal plan is all about fall.  The dishes that I’ve included here have inspired me and are making me excited about the season.  That’s what it’s all about!

Add chicken or goat cheese for protein if desired.

Make the soup and croutons completely in advance.  Soup is freezer friendly!



Creamy Pumpkin Sage Penne by Simply Fresh Dinners

Soak the cashews for the vegan cashew cream overnight.  If not following a vegan diet you may use heavy cream or milk in pumpkin puree.

Make the picadillo completely in advance or store in the freezer.
