Healthy Weekly Meal Plan 12.19.2015
Well, this is it…the last weekend before Christmas! I’m not ready because of a variety of reasons, but I’m not panicking. If I’m not done by Tuesday, I’ll be in full-on panic mode. 🙂
The good news is my healthy eating has continued for the most part, aside from bingeing on these biscotti. I’ve been making nice, healthy meals, and I hope that these meal plans are helping you do the same.
Enough chatter…on to this week’s meal plan!
Creamy Pumpkin and Brussels Sprout Gnocchi from Cookie Monster Cooking.
Prep Ahead: This meal comes together quite quickly and doesn’t require much prep!
Cauliflower and Kale Salad with Pomegranate, Dried Apricots, and Pumpkin Seedsfrom Spoonful of Flavor.
Prep Ahead: You can cook cauliflower “rice” ahead of time and then finish salad with remaining ingredients when you are ready to enjoy.
30 Minute Pork Chops with Creamy Bourbon Mushroom Sauce from Flavor the Moments.
Prep Ahead: This meal comes together in a flash, and doesn’t require much prep!
Chipotle Butternut Squash Soup from greens & chocolate.
Prep Ahead: You can roast the squash in advance. After that, the soup will come together very quickly. Serve with crusty bread and a salad!
Crock Pot Shredded Chicken Fajita Chili from The Roasted Root.
Prep Ahead: The recipe is super quick to prepare, but you can saute the veggies ahead of time if need be.
