I’m soaking up as much of summer as I can, how about you? This weekend I’m in San Diego for my son’s basketball tournament, and I’m hoping we’ll find some time to get outdoors and see some some beautiful sights. I’ve been before, and I just love it there. How about you — anything fun going on?
All I know is, when I get back I’m diving headfirst into my meal planning — I’ve been away and I need to get back on track! At any rate, I hope you enjoy your weekend and this week’s meal plans!

Prep Tips: Make sure your puff pastry dough is defrosted ahead of time. I like to place mine in the fridge overnight and I simply use it the next day.
