Would you look at us — here we are on the last day of July! Yup, summer has gone too fast, and it’s going even faster this year because my kids start school even earlier this year. Whatever happened to going back to school after Labor Day like it was when I was a kid? I have no clue what changed…maybe our kids need more school anyway because of video games and smartphones. I’ll just go with it. 🙂
I was a lot better with my meal planning last week and I’m going to stick with it! This week we’ve got plenty of easy recipes for you that can be be lunch or dinner, and a smoothie because it is summer and drinking something cold is a must! Prep Ahead: The BBQ sauce may be made in advance and the pineapple may also be prepped ahead.
Slow Cooker Pulled Pork Banh Mi from greens & chocolate.
Prep Ahead: the quick pickled veggies should be made at least a day in advance. The pork marinade can be made in advance.
Thai Chicken Salad Wrap with Blueberries from Spoonful of Flavor.
Prep Ahead: you can grill the chicken ahead of time and then assemble the wraps when ready to eat.
Spinach Berry Smoothie from Hip Foodie Mom.
Prep ahead: Freeze your ripe bananas beforehand. You can peel and break them into pieces, or slice them up. Throw them into a zip top bag and freeze!
Mixed Berry Mason Jar Salad from Lauren Kelly Nutrition.
Prep Ahead: Chop vegetables ahead of time. You can prepare the dressing ahead of time too.
