One Bowl Gingerbread Waffles
One Bowl Gingerbread Waffles are fluffy whole grain waffles with big sweet and spicy gingerbread flavor!
The One Bowl Gingerbread Waffles will always make me think of my nieces. Back in 2013 when I first started this blog, my nieces came over to help me with Christmas baking and spend the night.
We made armies of gingerbread men and dozens of sugar cookies, and they helped me decorate all of them (with a little help from my boys).
We stayed up late and watched movies like Home Alone and Diary of A Wimpy Kid, then in the morning we had gingerbread waffles.
The waffles were a recipe from Rachael Ray. They were amazing, but they were full of butter and sugar. I made them again the next year when they came over, then vowed to work on my own recipe.
My nieces have since gotten older and are too busy working and going to college to continue on with this tradition, so creating my own recipe was placed on the back burner.
This year I made it a priority, and tried it out for my son’s birthday breakfast a few weeks ago.
They were a complete hit and my boys ate four apiece. Four! Two waffles was more than enough for me.
I have to say that I’m pretty jealous that they can put food away like that and not gain any weight.
These One Bowl Gingerbread Waffles are 100% whole grain and are still soft and fluffy. They’re made with half the fat and sugar than original gingerbread waffles that I made, but they don’t skimp on flavor or texture.
In fact, these have even more sweet and spicy gingerbread flavor!
Normally I use oil instead of butter in my waffles, but I feel that gingerbread is better with butter flavor. There’s also plenty of molasses, a small amount of dark brown sugar, and 1 entire tablespoon of ground ginger.
I like my gingerbread spicy, so I also added some ground cinnamon and cloves. What really takes these Gingerbread Waffles over the top is some finely chopped candied ginger.
The candied ginger creates little sweet and spicy pops of flavor throughout the waffles that will make your tongue tingle.
I know many waffle recipes include separating eggs and beating the egg whites to make the waffles even fluffier, but I can’t be bothered with that.
I personally don’t think fussiness is worth a little extra fluffiness.
These waffles are perfect just the way they are and I only have one bowl to wash!
I thought these waffles were perfect with warm maple syrup, but you can make them your own by serving them a number of ways.
My kids asked me to add mini chocolate chips to their waffles, and I did. They’re a chip off the old block (no pun intended). They love their chocolate just like I do!
Powdered sugar makes them look nice and Christmas-y, and they’re terrific with fresh whipped cream as well. Garnish them with more candied ginger or mini chocolate chips for one delicious breakfast!
These gingerbread waffles make the house smell downright amazing and they taste even better. This recipe will definitely be our new holiday tradition. 🙂
One Bowl Gingerbread Waffles
Ingredients
- 2 large eggs
- 2 cups skim milk
- 1/4 cup molasses
- 2 tablespoons brown sugar packed (I prefer dark brown sugar)
- 2 cups whole wheat white flour or half whole wheat and half all purpose
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1 tablespoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 4 tablespoons unsalted butter melted and cooled slightly
- 2 tablespoons finely chopped candied ginger or crystallized ginger, plus more for serving (I use [this brand])
- Powdered sugar, whipped cream, chocolate chips or chopped candied ginger, for serving optional
Instructions
- Preheat your waffle iron according to manufacturer’s instructions.
- Beat the eggs in a large bowl until combined. Whisk in the milk, molasses, and brown sugar until incorporated.
- Stir in the flour, baking powder, baking soda, salt, ginger, cinnamon and cloves until just combined, then gently stir in the melted butter and crystallized ginger.
- Spray the waffle iron with cooking spray and cook the waffles according to manufacturer’s instructions. Repeat until all of the batter has been used.
- Serve the waffles with your favorite toppings and enjoy!
Notes
- The candied ginger is optional but highly recommended for even bigger spicy-sweet ginger flavor!
- Waffles are freezer friendly. Freeze on a wire rack in a single layer then place in zip top bags and freeze for up to 3 months.

I really (like really, really) want these for Christmas breakfast. I love gingerbread so much and in waffle form, where I can drench it in extra butter, I know I’d love it even more. Especially if I had your sons’ metabolism 🙂

I think we’re waffle soul-mates 😉 I LOVE waffles, but I have a hard time with all of the butter and sugar in so many of the recipes out there. I’m a big fan of 100% whole wheat for waffles and pancakes! These look so perfect for this time of year, Marcie! I cannot WAIT to try it for breakfast with the boys.

I made this exactly to the recipe this week and they are awesome! There was enough batter for a co-worker and myself to each have two Belgian waffles on Friday morning. I saved the leftover batter in the refrigerator and had enough to make about 1 1/2 waffles Saturday morning. I think they might have tasted even better.
