My lunches are normally pretty boring.  I typically don’t want to have to think about what I’m having because I’m normally working, so I just grab leftovers or make myself peanut butter banana toast.

Exciting right?

Every now and again I’ll get my ducks in a row and prep ingredients for a more exciting lunch like my favorite wrap or veggie sandwich, or create something totally new.

I love making curry chicken salad to enjoy for lunch as well, but some leftover pesto sauce in the fridge gave me an idea.

I created these fresh, summery Pesto Chicken Salad Sandwiches, and it was the best idea ever. It was necessary to make a special filling for a sandwich, because I had some very special bread.

No ordinary sandwich was going to do with Martin’s® 100% Whole Wheat Potato Bread in the house!

This was the first time I’d tried a product from Martin’s® Famous Potato Rolls and Bread and I was completely impressed.

Martin’s® bread is deliciously thick and fluffy with the lightest texture.  It was the perfect bread for my pesto chicken salad sandwiches.

Not only is this bread great tasting and high quality, but there are no artificial dyes, no trans fat, no high fructose corn syrup and no cholesterol.

I felt good about serving this bread to my family, and they loved each and every slice!

Let’s talk pesto for a moment.  You can absolutely use your favorite store bought pesto sauce for this pesto chicken salad, but I love making my own so that I control the ingredients.

Basil isn’t in season right now, so I used my Spinach Pesto recipe for my sauce. You can definitely substitute the spinach with fresh basil, or do a combination of both as well.

How to make this recipe

  • I used 2 cups of shredded chicken breast for my chicken salad, which is about 1 lb. of chicken.  A huge timesaver is using leftover chicken or rotisserie chicken.
  • Just make sure to season the chicken well with salt and pepper.  Yes, the pesto sauce will have flavor too, but if the chicken is very bland it will affect the overall flavor.
  • Add 1/4 cup of the pesto to the chicken, stir it in until combined, and then add 2-4 tablespoons of Greek yogurt (or mayo) depending on how creamy you want it.
  • Taste, adjust the seasoning if necessary, and it’s time to assemble those sandwiches!

Recipe notes

  • I chose to layer my Pesto Chicken Salad Sandwiches with plenty of veggies, including lettuce, sliced tomato and avocado.  Customize your sandwich with your favorites!
  • I’m not a fan of mayo so I like to use Greek yogurt to add creaminess to the pesto chicken salad. I used 2 tablespoons, but it you’d like it even creamier, add up to 1-2 tablespoons more. Mayo may be substituted for the Greek yogurt.
  • There will be pesto sauce leftover. Store in an airtight container in the fridge for up to 1 week.

Instructions 

Assemble the chicken salad and sandwiches:

  • Place the shredded chicken in a large bowl and season with salt and pepper, to taste. Add 1/4 cup of the pesto sauce and 2 tablespoons of the Greek yogurt and stir to combine. Add up to 1-2 more tablespoons of the Greek yogurt for added creaminess if desired. Taste and adjust the seasoning as necessary.
  • Place lettuce on (4) slices of bread, followed by half a cup of the chicken salad. Top with tomato and avocado if desired, and top with the other (4) remaining slices of the bread.
  • Serve and enjoy!

Notes

  • *I’m not a fan of mayo so I like to use Greek yogurt to add creaminess to the pesto chicken salad. I used 2 tablespoons, but it you’d like it even creamier, add up to 1-2 tablespoons more. Mayo may be substituted for the Greek yogurt.
