I’m serving up another healthy dish for you today, because I care about you. 🙂  I know it’s the new year, and you want to eat better and feel better.  In order to eat better, it’s nice to prepare food in a different way that’s going to get your taste buds jumping.

This Ratatouille will do that for you.  You don’t eat vegetable stews simmered with capers and fresh herbs every day do you?  I know I don’t, so I appreciate it when I do.

Truth be told, I made this Ratatouille months ago before Thanksgiving for my book club, and I saved just enough to photograph the next day.

Our book was the French novel Madame Bovary, and we all brought French-inspired dishes.  I mulled over what to bring long and hard, and finally landed on Ratatouille.

I’ve loved this dish forever, and nothing says French food more to me than that.  Plus, I really liked the animated movie. 😉

Ratatouille is a classic French peasant dish that always includes eggplant, tomatoes, zucchini and bell peppers.  Cooking the vegetables with bay leaf, thyme and rosemary add a ton of flavor.

Once the dish has finished cooking, add the capers for a nice briny punch of flavor and fresh basil to make it even more special.

The best part about this dish is that you can make it in advance.  The longer it sits, the better it tastes, and it’s freezer-friendly too!

Ratatouille is a rustic French vegetable stew with capers and fresh herbs.  It’s perfect served with pasta, polenta or crusty bread! {GF, DF, V}


  • 4 tablespoons extra virgin olive oil, divided
  • 1 onion, peeled, halved and sliced along the lines
  • 2 cloves garlic, minced
  • 1 medium eggplant or (3) small Japanese eggplant, cut into 1″ cubes
  • 1 red bell pepper, chopped in 1″ chunks
  • 1 yellow bell pepper, chopped in 1″ chunks
  • 2 medium zucchini, cut into 1″ pieces
  • 14 ounces low sodium diced tomatoes
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 2 sprigs fresh thyme or 1 teaspoon dried
  • 1 large sprig fresh rosemary or 1 teaspoon dried
  • salt and freshly ground black pepper, to taste
  • 1 teaspoon capers
  • 1/4 cup freshly chopped basil


  1. In a large pot, heat 1 tablespoon of the olive oil over medium heat. Add the onions and cook until softened, about 5 minutes.
  2. Add 2 more tablespoons of olive oil to the pan and add the garlic and eggplant.  Sauté for about 5 minutes until the eggplant has softened.
  3. Add the remaining 1 tablespoon of olive oil to the pan and add the peppers and zucchini. Sauté for 2-3 minutes until slightly softened.
  4. Add the tomatoes, tomato paste, bay leaf, thyme and rosemary, and season with salt and pepper to taste. Bring to a boil, then reduce heat and simmer for about 30  minutes or until the eggplant is tender, stirring occasionally.
  5. Remove from heat and stir in the capers, chopped basil and adjust the seasoning if necessary.  Enjoy!

Recipe Notes:

  • 2 large fresh tomatoes may be used in place of the canned tomatoes if desired.
  • While you can certainly use dried thyme and rosemary, fresh herbs really make a difference in this recipe.
  • Ratatouille is a great meal prep recipe!  It will keep for about 5 days stored in an air tight container in the fridge and also freezes well.
