Easy Rhubarb Cake

Gather your ingredients

Whisk dry ingredients in a medium bowl

Cream butter, sugar and orange zest till light and fluffy

Beat in eggs one at a time until incorporated, then beat in vanilla extract

Alternate adding 1/3 of flour mixture and 1/2 cup buttermilk, beginning and ending with flour mixture

Gently fold in chopped rhubarb

Pour batter into greased springform pan

Place stalks of rhubarb on top for decoration (optional)

Bake rhubarb cake for 40-50 minutes till toothpick inserted into center comes out clean

Serve with powdered sugar and whipped cream.  Enjoy!
