Ingredients

  • 2 lbs. smoked salmon

Quick picked shallots:

  • 1 large shallot
  • 1/2 cup apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon salt

Lemon dill whipped cream cheese

  • 8 ounces cream cheese softened
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh dill
  • 1/2 teaspoon sea salt

Other additions:

  • 6 hard boiled eggs
  • 6 mini bagels or use regular size
  • 8 ounces assorted sliced bread or crackers
  • 1 lb. assorted grapes
  • 1 lb. strawberries
  • 2 blood oranges
  • 1 cucumber sliced
  • 1 bunch radishes sliced
  • 1 cup cherry tomatoes
  • 1 avocado sliced
  • 1 cup olives
  • 1 lemon sliced
  • fresh dill sprigs

Instructions 

Prepare the quick pickled shallots:

  • Peel and slice the shallots thinly, then place in a mason jar or bowl.
  • In a small sauce pan, bring the apple cider vinegar, maple syrup and salt to a boil. Turn the heat down to medium and simmer for 5 minutes, then pour over the shallots.
  • Allow to stand for a minimum of 1 hour at room temperature, or for best results cool completely, cover and store in the fridge overnight.

Prepare the lemon dill whipped cream cheese:

  • Place the softened cream cheese in a medium bowl and beat with a handheld mixer until light and fluffy, about 2-3 minutes. Add the lemon zest, lemon juice, chopped dill and salt and beat until combined.

Assemble the brunch board:

  • Place the smoked salmon in the center of your board, and place the whipped cream cheese in (2) small bowls on opposite sides of the board. Arrange the bagels and bread near the spreads, and arrange the remaining items in a visually appealing way. Fill in any large gaps with lemon slices and fresh dill sprigs, then serve and enjoy!

Notes

  • Nutrition information will change depending on the type of bagels and crackers that are served.  
  • Prep the whipped cream cheese, pickled onions and eggs a day in advance.
  • Take dietary restrictions into consideration. For example, serve gluten-free bagels or bread by one of the spreads, or serve a dairy free spread.
  • This recipe is easily scaled to feed a larger or smaller crowd. And remember, everything doesn't need to go on the board at once! Have extra bread, eggs, fruits, etc. prepped and replenish as needed.
