Pina Colada Overnight Oats

Pina Colada Overnight Oats are creamy and delicious with the flavors of coconut and fresh pineapple. They're an easy meal prep breakfast that's vegan and gluten-free!

Ingredients

  • 2 cups old fashioned rolled oats*
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup
  • cups coconut milk
  • 1 cup unsweetened coconut milk yogurt
  • 1 cup chopped fresh pineapple crushed pineapple may be substituted
  • ½ cup sweetened shredded coconut

Instructions 

  • Place the oats, chia seeds, maple syrup and milk in a medium bowl and stir to combine. Cover with plastic wrap and chill in the refrigerator overnight.
  • Remove the plastic wrap the next day and stir in the yogurt, pineapple, and coconut. Top with more coconut and pineapple if desired. Serve and enjoy!

Notes

  • I added the fresh pineapple to the oats the night before and it was extremely sour the next day.  Add the pineapple just before serving.
  • The coconut milk and dairy free yogurt may be substituted with the milk and yogurt of your choice.
  • I found that just a bit of maple syrup plus the juicy pineapple made these oats plenty sweet for me. If you like things sweeter, you can use sweetened vanilla yogurt or add more maple syrup!
