Oven Baked Pork Chops

Oven Baked Pork Chops are pan seared until browned then baked to juicy perfection. They're an easy dinner recipe that's ready in about 20 minutes!

Ingredients

  • 4 1 1/2" boneless pork chops trimmed of excess fat
  • salt and pepper to taste
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon garlic powder
  • 2 teaspoons chopped fresh rosemary or sub with 1 teaspoon dried
  • 3 tablespoons olive oil divided

Instructions 

  • Preheat the oven to 400 degrees. Season the pork chops with salt and pepper, to taste.

  • Combine the cumin, coriander, garlic powder, chopped rosemary and 1 tablespoon of the olive oil in a small bowl. Rub the mixture on all sides of the pork chops.

  • Heat the remaining 2 tablespoons of olive oil in a cast iron skillet or oven proof sauté pan over medium high heat. Add the pork chops and sear for 2 minutes on each side, or until a nice golden brown crust has formed. Remove from heat.
  • Place the skillet into the oven and bake for 8-15 minutes, or until an internal thermometer into the thickest part of the pork chop registers 145 degrees. Cooking temperature will vary based on the thickness of your pork chops!
  • Remove from heat, cover loosely with foil and allow to rest for 5-10 minutes. Serve and enjoy!

Notes

  • Pro tip:  Be sure to cook the pork chops in a skillet or dish that's just big enough for them.  The ensures that they'll cook in their juices, which makes for a nice tender pork chop.  Be sure and pour those juices over the chops just before serving!
  • Pan searing the pork chops on the stove top is essential for a crispy crust, but this step is optional. If you prefer to skip this step, bake for a total of 15-18 minutes in the oven or until an instant read thermometer registers 145 degrees.
  • These baked boneless pork chops were 1 1/2" thick and they took 18 minutes total time to cook. If using bone-in pork chops, the cooking time will be longer.
