Fig Almond Energy Bite Truffles are easy 4-ingredient vegan energy bites rolled in your choice of coatings to make a deliciously healthy and fun snack or dessert!
1/2cupalmond mealsuch as Bob's Red Mill or 1/2 cup of whole raw almonds
1tablespoonmaple syrup
Optional coatings:
unsweetened cocoa powder
unsweetened shredded coconut
chopped almonds
chocolate sprinkles
Instructions
Place the figs, oats, and almond meal or almonds in a food processor and process until the mixture forms a paste. With the processor running, add the maple syrup through the feed tube and process until incorporated. Place the mixture in a small bowl.
Place a sheet of waxed paper on a rimmed baking sheet. Using a 1/2" cookie scoop or tablespoon, form the mixture into about 14 balls. Enjoy as-is, or roll into the optional coatings.
Notes
Store the truffles in an air tight container at room temperature.
