Deviled Eggs with Bacon are creamy, delicious and topped with crisp bacon and fresh chives. They're an easy, elegant appetizer that's perfect for any occasion!
4tablespoonsmayonnaiseI used avocado oil mayo, but use your favorite. Greek yogurt is also a great substitute
1teaspoondijon mustardsub with yellow mustard if you don't have any on hand
1/4teaspoonsaltor to taste
1/8teaspoonfreshly ground black pepperor to taste
2tablespoonschopped fresh chives
2slicesthick cut baconcooked and crumbled; see notes
Instructions
Cut the hard boiled eggs in half lengthwise and place the yolks in a small bowl. Mash the yolks with a fork until fairly smooth. Add the mayo, dijon mustard, salt, and pepper and blend into the yolks with the fork until well combined.
Pipe or spoon the yolk mixture into the cavities of each egg, and sprinkle with the chives and top with the crumbled bacon. Serve and enjoy!

This recipe may be scaled to feed any size crowd.
