This Spring Mix Salad is fresh and vibrant with crisp spring lettuce, sweet shaved carrot, peppery radish, creamy avocado and sunflower seeds. It's a healthy vegan salad that's sure to be a favorite!
Place the spring mix lettuce, radish, carrot, avocado and sunflower seeds in a large bowl.
5 ounces spring mix lettuce, 4 large radish, 1 medium carrot, 1 avocado, 1/3 cup sunflower seeds
Toss with enough dressing to coat and serve immediately. For best results, do not toss the salad with dressing until right before serving. Enjoy!

Pro tip: Prep the carrot and toss with the spring lettuce up to a few hours in advance to make assembly go even more quickly. The dressing may be prepared up to a few days in advance.
