Place the cocoa powder in a mug. Add 2 tablespoons of the milk and sweetener, and mix with a mini whisk or spoon until smooth. Add the remaining milk and chopped chocolate if using, and whisk until well combined.
Place in the microwave and cook for 1 - 1 1/2 minutes or until the desired temperature is reached. Add the extracts if using, and whisk or stir until smooth.
Top with marshmallows, coconut cream if desired and enjoy!
Notes
*For very rich dairy free hot chocolate, use full fat coconut milk.
**I only use 2 teaspoons of sweetener because the marshmallows that I love topping my cocoa with contain plenty of sugar. Add more sweetener to suit your tastes.
