fresh pineapple chunks
about 1 small pineapple
13.5
ounces
full fat coconut milk*
3
tablespoons
agave syrup or the sweetener of your choice

ice
1/4
cup
plus 2 tablespoons dark rum*
Instructions
Place the pineapple, coconut milk, agave syrup, ice and rum in a blender. Process until smooth. Taste and add more sweetener or rum as desired.
Serve immediately and enjoy!
Notes
Full fat coconut milk is best here as light coconut milk will make your drink less creamy and slightly watery.
If you like your drinks sweeter, add a bit more agave or the sweetener of your choice.
I like my cocktails a bit on the stronger side. If you like yours a bit more mild, try this recipe with 1/4 cup rum first and add more if necessary.
Use pre-cut pineapple as a time saver!
