  • 3 1/2 cups fresh pineapple chunks about 1 small pineapple
  • 13.5 ounces full fat coconut milk*
  • 3 tablespoons agave syrup or the sweetener of your choice
  • 2 cups ice
  • 1/4 cup plus 2 tablespoons dark rum*


  • Place the pineapple, coconut milk, agave syrup, ice and rum in a blender. Process until smooth. Taste and add more sweetener or rum as desired.
  • Serve immediately and enjoy!


  • Full fat coconut milk is best here as light coconut milk will make your drink less creamy and slightly watery.
  • If you like your drinks sweeter, add a bit more agave or the sweetener of your choice.
  • I like my cocktails a bit on the stronger side. If you like yours a bit more mild, try this recipe with 1/4 cup rum first and add more if necessary.
  • Use pre-cut pineapple as a time saver!
