  • 1 cup plain Greek yogurt
  • 1 cup skim milk
  • 1 tablespoon baking powder
  • 2 large eggs

Additional Ingredients:

  • 1 large banana mashed (1/2 cup)
  • 4 tablespoons oil
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional ingredients:
  • Maple syrup for serving

  • Preheat your waffle iron according to manufacturer's instructions.
  • Whisk together the flour, baking powder, cinnamon, and salt in a large bowl.
  • In a medium bowl, whisk the eggs with the Greek yogurt and milk until well combined. Add the oil, maple syrup and banana, and whisk until incorporated.
  • Pour the wet ingredients into the dry ingredients and stir just until the flour has been incorporated.
  • Spray the waffle iron with cooking spray, and cook the waffles according to manufacturer's instructions.
  • Serve warm with maple syrup, if desired, and enjoy!

  • These waffles are very freezer friendly. Simply freeze in a single layer on a wire rack, and once frozen, transfer to a zip top bag and keep in the freezer. Pop them in the toaster on busy mornings and enjoy!
  • Substitute the maple syrup for your favorite sweetener.
