Banana Greek Yogurt Waffles
Banana Greek Yogurt Waffles are light, fluffy banana waffles packed with the goodness of whole grains. They're a nutritious breakfast the entire family will love!
Ingredients
Key Ingredients:
- 2 cups whole wheat white flour
- 1 cup plain Greek yogurt
- 1 cup skim milk
- 1 tablespoon baking powder
- 2 large eggs
Additional Ingredients:
- 1 large banana mashed (1/2 cup)
- 4 tablespoons oil
- 2 tablespoons maple syrup
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Optional ingredients:
- Maple syrup for serving
Instructions
- Preheat your waffle iron according to manufacturer's instructions.
- Whisk together the flour, baking powder, cinnamon, and salt in a large bowl.
- In a medium bowl, whisk the eggs with the Greek yogurt and milk until well combined. Add the oil, maple syrup and banana, and whisk until incorporated.
- Pour the wet ingredients into the dry ingredients and stir just until the flour has been incorporated.
- Spray the waffle iron with cooking spray, and cook the waffles according to manufacturer's instructions.
- Serve warm with maple syrup, if desired, and enjoy!
Notes
- These waffles are very freezer friendly. Simply freeze in a single layer on a wire rack, and once frozen, transfer to a zip top bag and keep in the freezer. Pop them in the toaster on busy mornings and enjoy!
- Substitute the maple syrup for your favorite sweetener.
