Instructions
Preheat your waffle iron according to manufacturer's instructions.
Beat the eggs in a large bowl until combined. Whisk in the milk, molasses, and brown sugar until incorporated.
Stir in the flour, baking powder, baking soda, salt, ginger, cinnamon and cloves until just combined, then gently stir in the melted butter and crystallized ginger.
Spray the waffle iron with cooking spray and cook the waffles according to manufacturer's instructions. Repeat until all of the batter has been used.
Serve the waffles with your favorite toppings and enjoy!
Notes
The candied ginger is optional but highly recommended for even bigger spicy-sweet ginger flavor!
Waffles are freezer friendly. Freeze on a wire rack in a single layer then place in zip top bags and freeze for up to 3 months.
