Peanut Butter Rice Krispie Treats are are packed with peanut butter and brown rice cereal, and contain no refined sugar. They're drizzled with dark chocolate for the ultimate no bake dessert!
Line an 8x8" square baking dish with parchment paper or foil and set aside.
Place the peanut butter in a medium bowl and microwave for 30 seconds until loosened enough to stir easily. Add the maple syrup, coconut oil and vanilla and stir well to combine.
1 cup peanut butter, 1/3 cup maple syrup, 1/4 cup melted coconut oil, 1 teaspoon vanilla extract
Add the brown rice cereal and stir until well coated with the peanut butter mixture.
2.5 cups crisp rice cereal
Pour the mixture into the prepared dish and spread evenly.
Place the chocolate in a small bowl and microwave in 30 second increments, stirring after each one until it's completely melted. Pour the chocolate over the peanut butter mixture and spread in a thin, even layer. Top with flaky sea salt and chill for a minimum of 2 hours or overnight. Cut into bars, then serve and enjoy!

Notes
Pro tip: Store the krispie treats in the refrigerator as they will soften at room temperature. They will keep for up to one week, but keep in mind that the crisp rice cereal will soften over time.
Change things up by adding chocolate chips to the mixture, or top with sprinkles or white chocolate.
