This One Pot Ground Beef Stroganoff Recipe is an easy, one pot dinner that the entire family will love! It takes 5 minutes of prep and it's ready in 30 minutes!
Heat 1 tablespoon of the oil in a large skillet over medium heat. Add the mushrooms and a pinch of salt and cook until browned and the liquid has evaporated, about 4-5 minutes. Place the mushrooms in a bowl and set aside.
2 tablespoons olive oil, 16 ounces mushrooms
Add the remaining tablespoon of oil to the skillet and add the ground beef. Break up the beef into bite sized pieces and cook over medium heat until no longer pink, about 3-4 minutes. Add the garlic and cook 30 seconds more, then drain any excess grease.
3 cloves garlic, 1 lb. grass fed ground beef
Add the wine and beef broth and bring to a boil. Add the egg noodles and cook for 10-12 minutes longer, or until most of liquid has absorbed and the noodles are cooked, turning down the heat slightly as needed. Add the mushrooms back to pan during the last minute or so of cooking time.
1/3 cup white wine, 4 cups beef broth, 8 ounces wide egg noodles
Remove from heat and stir in the sour cream until well incorporated. Season with salt and pepper as needed and serve garnished with the chopped chives. Enjoy!

Notes
Pro tip: Be sure to cook the stroganoff uncovered as this will help the liquid evaporate.
If you prefer not to cook with alcohol, simply omit it. You can add 1 tablespoon of dijon mustard or Worcesterhire sauce for added flavor if desired.
For added protein, use 1 1/2 lbs. of ground beef and 8 ounces of mushrooms if you prefer.
Store hamburger stroganoff in the refrigerator in an air tight container for up to 3 days.
