This One Pot Ground Beef Stroganoff is an affordable family dinner that’s creamy, satisfying and so easy to make! It takes just a few ingredients and it’s ready in about 30 minutes!
Busy weeknights call for easy dinners that are on the table quickly with minimal cleanup. And let’s not forget that it needs to family-friendly so that everyone is happy!
This One Pot Ground Beef Stroganoff fits that description perfectly. It’s ready in 30 minutes, there’s only one pot to wash, and it’s completely family friendly.
This version is even more affordable than classic beef stroganoff because it utilizes ground beef instead of steak.
It’s also a lot easier because like my one pot farfalle pasta and one pot pasta primavera, the sauce and the pasta cook up in the same pot.
One of the things I love most about one pot pasta recipes is that starches from the pasta are released into the dish as it cooks, creating a nice silky sauce.
This one pot beef stroganoff gets even better because sour cream is stirred into it when it comes off the heat, creating an irresistible creamy, tangy sauce.

Ingredient notes
- Ground beef. I used 1 lb. of 93% lean grass fed ground beef for less fat and more flavor. You can certainly use your favorite ground beef. You can also safely add another 1/2 lb. (1.5 lbs. total) to up the protein. The ground beef may be substituted with your favorite ground meat.
- Egg noodles. Beef stroganoff is classically served over egg noodles, but feel free to use 8 ounces of your favorite pasta.
- Mushrooms. 1 lb. of mushrooms may look like a lot, but they are predominantly water so they cook down considerably.
- Garlic. Fresh garlic adds a ton of flavor to the dish.
- White wine. The white wine adds delicious depth of flavor. Be sure to use a dry white wine that is drinkable quality such as Sauvignon Blanc, or substitute it with dry sherry or brandy. The alcohol can also be omitted entirely if you prefer not to use it.
- Beef broth. Use low sodium beef broth to control the sodium.
- Olive oil. Sub with your favorite oil.
- Sour cream. The sour cream is stirred into the stroganoff after cooking. It adds creaminess and a delicious tangy flavor. Sub with Greek yogurt if desired or it can be left out entirely if you are following a dairy-free diet.
- Chives. Freshly chopped chives are a great way to garnish this one pot beef stroganoff. They add a mild onion flavor and pop of freshness and color. Feel free to sub with scallions or freshly chopped parsley.

- Sauté the mushrooms in olive oil until browned and the liquid has evaporated. Remove from the pan and set aside.
- Cook the ground beef, breaking it into small pieces, until it’s cooked through. Add the garlic and cook 30 seconds longer, and drain any excess grease.
- Add the wine and beef broth and bring to a boil. Add the egg noodles and cook 10-12 minutes or until the liquid has been absorbed and the noodles are tender. Add the mushrooms back to the pan during the last minute or so of cooking time.
- Remove the pan from heat and stir in the sour cream. Adjust the seasoning as necessary and garnish with chopped chives if desired.

Ingredients
- 2 tablespoons olive oil divided
- 16 ounces mushrooms stemmed and sliced
- 3 cloves garlic minced
- 1 lb. grass fed ground beef
- 1/3 cup white wine sub with brandy, sherry or omit
- 4 cups beef broth
- 8 ounces wide egg noodles
- 1/2 cup sour cream sub with Greek yogurt if desired
- 1/4 cup freshly chopped chives optional
Instructions
- Heat 1 tablespoon of the oil in a large skillet over medium heat. Add the mushrooms and a pinch of salt and cook until browned and the liquid has evaporated, about 4-5 minutes. Place the mushrooms in a bowl and set aside.2 tablespoons olive oil, 16 ounces mushrooms
- Add the remaining tablespoon of oil to the skillet and add the ground beef. Break up the beef into bite sized pieces and cook over medium heat until no longer pink, about 3-4 minutes.
