Apple Cinnamon Baked Oatmeal is fluffy baked oats with the warm flavor of cinnamon, tender apples and a crunchy walnut streusel. It's an easy fall breakfast that's great for meal prep!
2cupsunsweetened almond milkor milk of your choice
1/2cupapplesaucesee note 2

For the walnut streusel
2tablespoonsbuttermelted
2tablespoonscoconut sugarsub with brown sugar

1/2cupwalnut pieces
Instructions
Place the oats, milk, applesauce and 1 teaspoon cinnamon in a medium bowl and mix well to combine. Cover with plastic wrap and chill for 3 hours or overnight to soften the oats. Softening the oats is optional but recommended as it gives the baked oatmeal a softer, fluffier texture.
2 cups old fashioned rolled oats, 2 cups unsweetened almond milk, 1/2 cup applesauce, 1 teaspoon ground cinnamon
Preheat the oven to 350 degrees. Grease an 8x8" baking dish and set aside.
Once the oats have softened, add the beaten egg, baking powder and salt and mix well to combined. Stir in the apple and pour the mixture into the prepared baking dish and spread evenly.

Combine the melted butter, coconut sugar and 1/2 teaspoon cinnamon in a small bowl. Add the walnuts and stir until combined, then sprinkle the streusel over the oats.
Bake for 30-40 minutes, or until set and the streusel is golden brown. Check for doneness after 30 minutes. If it's not done and the streusel begins to brown too quickly, cover loosely with foil for the remainder of the baking time. Remove from heat and cool on a wire rack for 10-15 minutes. Enjoy!
Notes
Pro tip: Allow the oats to soften in the milk for a minimum of 3 hours or overnight for a soft, fluffy texture.
If you don't have applesauce on hand, simply omit it and add 1/3 cup maple syrup or your favorite sweetener to sweeten the baked oatmeal.
Use your favorite baking apple such as Honeycrisp, Golden Delicious, Granny Smith, Pink Lady, etc.
Store leftover apple baked oatmeal in an airtight container in the refrigerator for up to 4–5 days. Individual portions can be reheated in the microwave until warm, making this a great make-ahead breakfast for meal prep.
The oatmeal may also be frozen. Cool it completely, cut it into individual portions and freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator and reheat before serving.
