Honey Champagne Vinaigrette is light, tangy and subtly sweet, and it comes together with just 4 ingredients. It takes less than 5 minutes to make and is fresher than anything you can buy at the store!
Place all the ingredients in a jar and secure the lid.
1/2 cup extra virgin olive oil, 1/4 cup champagne vinegar, 2 tablespoons honey, 1 tablespoon dijon mustard, 1/4 teaspoon sea salt, 1/8 teaspoon black pepper
Shake vigorously until emulsified, then taste and adjust the seasoning as necessary. Serve and enjoy!

Pro tip: Once the dressing has been chilled, allow it to stand at room temperature for about 30 minutes prior to using it, then shake vigorously until emulsified.
Sub the champagne vinegar with white balsamic or white wine vinegar.
Add a tablespoon of freshly chopped shallot and/or a minced garlic clove and process in a food processor for additional flavor.
Store champagne vinaigrette in the refrigerator for up to 2 weeks.
