For the fries:

  • 2 lb. sweet potatoes peeled and cut into 1/2 - 3/4" thick wedges
  • 2 tablespoons extra virgin olive oil
  • salt and pepper to taste

For the ketchup:

  • 1/2 cup ketchup
  • 4 teaspoons Sriracha or more if you like it spicier!
  • 2 tablespoons fresh orange juice
  • 2 teaspoons freshly grated ginger

Prepare the sweet potato fries:

  • Preheat the grill to medium high heat.
  • Toss the sweet potatoes with the olive oil, and salt and pepper to taste on a large rimmed baking sheet until well coated.
  • Reduce the heat to medium and place the wedges on the hot grill. Grill for 6 minutes or until nicely charred, then flip and grill for 6-8 minutes longer, or until softened. The sweet potato wedges will be slightly blistered when they're ready.
  • Remove from heat and sprinkle with extra sea salt if desired, and serve immediately. Enjoy!

Prepare the sriracha ketchup:

  • Place the ketchup, sriracha, orange juice, and ginger in a small bowl and stir until combined. Set aside.

  • These fries are great with the peel on or off -- you decide!
  • Prep your sweet potato wedges ahead of time and store in the refrigerator in an air tight container until ready to grill.  Bring to room temperature before grilling as they'll take longer to grill when they're cold.
  • Change your sweet potato fries up by tossing with your favorite herbs and seasonings, or serve them with your favorite dipping sauce.
  • Grated ginger can be quite spicy, so use less if you'd like it to be more of a background flavor. To grate ginger easily, freeze ginger root and grate it, peel and all, with a Microplane grater.
