  • 1 cup dried figs stems removed, and halved if large
  • 1/2 cup old fashioned rolled oats
  • 1/2 cup almond meal such as Bob's Red Mill or 1/2 cup of whole raw almonds
  • 1 tablespoon maple syrup

Optional coatings:

  • unsweetened cocoa powder
  • unsweetened shredded coconut
  • chopped almonds
  • chocolate sprinkles

  • Place the figs, oats, and almond meal or almonds in a food processor and process until the mixture forms a paste. With the processor running, add the maple syrup through the feed tube and process until incorporated. Place the mixture in a small bowl.
  • Place a sheet of waxed paper on a rimmed baking sheet. Using a 1/2" cookie scoop or tablespoon, form the mixture into about 14 balls. Enjoy as-is, or roll into the optional coatings.

  • Store the truffles in an air tight container at room temperature.
