This Easy Pina Colada Recipe is bursting with fresh pineapple, it's creamy and refreshing, and it comes together with 3 simple ingredients. It's so easy to make and there's no added sugar!
1cupfresh pineapple chunkssub with frozen; see note 2
1/4cupcoconut creamsee note 3
1ouncedark rumsee note 4; add up to 1/2 ounce more for a stronger cocktail
1cupiceadd more for an extra frosty drink
Instructions
Place the pineapple, coconut milk, dark rum and ice in a high powdered blender.
1 cup fresh pineapple chunks, 1/4 cup coconut cream, 1 ounce dark rum, 1 cup ice
Secure the lid and process until smooth. Taste and add more rum, ice or sweetener as desired. Serve immediately and enjoy!
Notes
Pro tip: Cut your pineapple up to a few days in advance. Use pre-cut fresh pineapple as a time saver.
If you use frozen pineapple, you will not need to add ice. You may need to add a bit more liquid to help blend the frozen pina coladas.
I used coconut cream in this piña colada recipe, but it can be substituted with canned full fat coconut milk or cream of coconut. Keep in mind that cream of coconut is sweetened, so if you use it you'll have a sweeter cocktail.
Dark rum is deep amber in color and adds warm depth of flavor. Use light rum if you prefer a cleaner flavor. Want the best of both worlds? Use light rum in the cocktail and pour an additional 1 ounce of dark rum over the top for a pina colada with dark rum topper.
The amount of sweetness is a personal preference. If you like a sweeter cocktail, add simple syrup, honey or your favorite sweetener to taste.
