Slow Cooker BBQ Pulled Chicken is tender pulled chicken smothered in tangy barbecue sauce. This is an easy dump and go recipe that only requires 3 ingredients
Season the chicken with salt, pepper and the bbq rub on both sides and nestle into the BBQ sauce in the slow cooker.
1 tablespoon bbq rub, salt and pepper, 2 lbs. boneless skinless chicken breasts
Cover and cook on high for about 2-3 hours or on low for 4-6 hours, or until a thermometer inserted into the chicken registers 165 degrees and shreds easily. Cooking time will vary based on the size of your chicken breasts.
Remove the chicken from the slow cooker and place on a cutting board. Shred with two forks, discarding the bones if using bone-in chicken. Place back in the BBQ sauce and stir until well coated with sauce. Serve and enjoy!
Notes
Pro tip: Based on the flavor of your BBQ sauce, consider adding the following: 1-2 tablespoons apple cider vinegar and 1 tablespoon Worcestershire sauce if it's too sweet, or 2 tablespoons of sweetener if it's not sweet enough.
Bone-in chicken breasts are more cost effective and the bones add flavor. If using them, be sure to remove the skin prior to cooking, and the bones after cooking.
Store BBQ pulled chicken in the refrigerator for up to 3 days or freeze for up to 3 months.
