This Chicken Cobb Salad is loaded with juicy chicken breast, crisp bacon, blue cheese and creamy avocado. It makes a satisfying low carb dinner or meal prep lunch!
Divide the greens between (4) large plates and top with the chicken, bacon, hard boiled eggs, cherry tomatoes, cucumber, avocado and bleu cheese.
2 air fryer chicken breasts, 4 slices air fryer bacon, 4 hard boiled eggs, 5 ounces spring lettuce mix, 1 pint cherry tomatoes, 1 medium cucumber, 1 large avocado, 1/2 cup crumbled blue cheese
Drizzle each salad with red wine vinaigrette and serve immediately. Enjoy!

Pro tip: Prepare the chicken breast, bacon and hard boiled eggs in advance to make salad prep go very quickly! To save on time, use leftover or rotisserie chicken and store bought hard boiled eggs.
