I have a thing for loaded salads, and I almost always choose them over an entree when I eat out at a restaurant. They’re extremely satisfying, and they’re full of delicious ingredients, textures and flavors.

I’ve recreated some of my all time favorites at home, including my salmon nicoise, shrimp louie, and finally this Chicken Cobb Salad.

It’s so easy to make at home, and it’s one of the most satisfying salads because it’s packed with protein and it doesn’t skimp on flavor in the slightest.

The ingredients work so well together that I can’t pick one as my favorite. They each play a role, and the salad wouldn’t be the same without one of them.

I’m not even a big fan of blue cheese, but it pairs so well with the other ingredients that I’ve never thought to sub it with anything else.

It’s one of the most perfect salads, and I don’t believe in messing with perfection. 🙂

Ingredient notes

  • Chicken breast. I love preparing my air fryer chicken breast in this recipe because it’s so juicy, but you can also use Instant Pot shredded chicken or rotisserie chicken as well.
  • Hard boiled egg. Prepare a batch of hard boiled eggs or use your favorite store bought brand.
  • Bacon. I make my air fryer bacon for this recipe because it’s the easiest way to prepare it! You can certainly cook it using your favorite method.
  • Blue cheese. I’m not normally a big fan of blue cheese, but I can’t imagine any other cheese in this salad. It pairs perfectly with the chicken, smoky bacon, hard boiled egg and avocado! If you really don’t like it, try substituting it with feta or your favorite cheese.
  • Greens and veggies. I used spring greens, cherry tomatoes and cucumber in this cobb salad, but you can change it up with your favorite lettuce or whatever veggies that you have on hand.
  • Dressing. Classic cobb salad typically includes red wine vinaigrette, which is what I’ve used here. Greek yogurt ranch dressing, balsamic vinaigrette or your favorite salad dressing would work as well.

Ingredients

  • 2 air fryer chicken breasts sliced (or use leftover or rotisserie chicken)
  • 4 slices air fryer bacon chopped (or prepare according to package instructions)
  • 4 hard boiled eggs peeled and halved
  • 5 ounces spring lettuce mix or your favorite greens
  • 1 pint cherry tomatoes halved
  • 1 medium cucumber chopped
  • 1 large avocado diced
  • 1/2 cup crumbled blue cheese
  • red wine vinaigrette

Instructions 

  • Divide the greens between (4) large plates and top with the chicken, bacon, hard boiled eggs, cherry tomatoes, cucumber, avocado and bleu cheese.
    2 air fryer chicken breasts, 4 slices air fryer bacon, 4 hard boiled eggs, 5 ounces spring lettuce mix, 1 pint cherry tomatoes, 1 medium cucumber, 1 large avocado, 1/2 cup crumbled blue cheese
