Happy St. Patrick’s Day! We’re all enduring a difficult time right now, but hopefully you’ll still be able to celebrate the day with the ones you’re the closest to today.
Every year I prepare a traditional Irish feast of Corned Beef and Cabbage and Irish soda bread for my family, just the way my mom did when I was growing up.
I secretly look forward to the next day when I can make Corned Beef Sliders with the leftover beef. They’re the very best part, and I think my family would agree. 🙂
Why you’ll love this recipe:
- Slider rolls are filled with tender Guinness-braised corned beef and creamy cabbage coleslaw. They’re a fun way to enjoy your corned beef and cabbage!
- Corned beef and coleslaw may be made in advance, then sliders can be assembled just before serving.
- These are perfect for entertaining. Set up a slider bar and allow guests to assemble the sliders themselves.
- Corned beef sliders are easily customizable with your favorite spreads or toppings.
How to make this recipe
These sliders couldn’t be easier to make, and each component may be done in advance.
- Prepare the corned beef. The beef may be prepared in your Instant Pot or slow cooker by following the instructions in my Corned Beef and Cabbage recipe. This may be done up to a day in advance.
- Prepare the coleslaw. Shred the cabbage yourself or use a 12 ounce bag of organic coleslaw blend. Toss the cabbage in my Coleslaw Dressing or buy your favorite store bought brand.
- Assemble the sliders. Place slices of corned beef on the bottom slider roll, then top with coleslaw. Spread horseradish or whole grain mustard on the top slider roll and place on top. Secure with a toothpick. You can also create a slider bar for parties or gatherings with a variety of spreads.
How to serve corned beef sliders
Serve sliders with the following recipes:
- Crispy smashed baby potatoes
- Homemade horseradish
- Roasted carrots and parsnips
- Yukon gold mashed potatoes
Recipe notes
- Corned beef may be prepared up to a day in advance and warmed before assembling the sliders.
- Coleslaw may be prepped in advance. Toss with the coleslaw dressing just before serving.
- To make sliders gluten-free, substitute the Guinness with water and use gluten-free slider rolls.
- Customize sliders with your favorite spreads.

Thank you, Christina, and I appreciate the pin! 🙂
I used to go crazy for corned beef sandwiches when I worked in SF — there was such a great deli nearby. Now I only have it once a year pretty much, but it was fun to make sliders out of it! Thanks, Mary Frances. 🙂
Thank you, Velva! 🙂
I think everything is more fun to eat in a small portion, and I agree with you 100% — it’s still hard to eat just one. haha Thanks, Juliana! 🙂
these Guinness Conred beef sliders look so, so good! I need to stop drinking my Guinness’ and start to do more cooking with them 🙂
Thank you, Katie, and IF you have a bottle left, this is the place to use it! haha 🙂
My husband has been asking me to make corned beef for yearsssss now for St. Patty’s Day! (he’s Irish) And yet I always ignore his request for some reason 🙂 haha Love these little sliders and especially that it’s in the slow cooker!
I don’t really make corned beef more than once a year, but it’s best in sandwiches! Maybe this year will be your year, Ashley…or should I say your husband’s? haha

Guinness is so great to cook with (as is beer in general). You should know! haha Thanks, Justine! 🙂
I think on St Patrick’s Day, everyone is a little Irish. Ha! I love these guinness corned beef sliders! So smart to combine the guinness and corned beef, I bet it gives it amazing flavor.
Thank you, Natalie! The Guinness does give the corned beef a richer flavor, covering up some of that saltiness. haha
My husband has Irish blood on both sides,, he’ll love these!
Thank you, Sue! 🙂
No Irish here either, but I’m going to keep putting Guinness in everything in site. Love these sliders. Wish I had some right now!
I have been loving your stout recipes lately, Liz! I tried making a stout fudge but it didn’t set right. I think I added too much beer! haha
I’m not Irish at all either, but I do love a good corned beef recipe! These sliders are such a good idea, Marcie! They look so flavorful and delicious. Love that you made it in the slow cooker, too! Pinned!

I’m loving all of the Guinness recipes I’m seeing, and these sliders are so creative! Anything in slider form is more fun, I think!
I have yet to make a chocolate Guinness recipe (successfully anyway), but I’m glad it worked out here. 🙂 Sliders are definitely more fun to eat, and are especially great for parties!
Dumping guinness into all our food we make is the best:) These sliders look amazing! Love that you made the corned beef in the slow cooker!
Thank you, Kelly! And here’s to Guinness and slow cookers! 🙂
Ok Marcie, I hope we can still be friends 🙂 I have never had corned beef…. not something we ever made but this sandwich looks so good!! I’ll need to give it a try!
Of course we can still be friends, Deb! I only have corned beef about once a year — which is about a year’s worth of salt intake. haha My favorite way to eat it is in a sandwich! 🙂
This looks amazing! So festive and totally delicious 🙂 Love that this is made in a slow cooker!
Thank you, Medha! 🙂
