My flourless peanut butter cookies are one of my favorite ways to enjoy it. It happens to be one of my most popular recipes, so that tells me that I’m not alone in my peanut butter obsession. 🙂

While I love to bake, this time of year I prefer not to turn the oven on if I can help it.

They have no marshmallows, refined sugar or dairy and can be customized a number of ways depending on what you have on hand.

  • Peanut butter. For the healthiest option, use natural peanut butter with no added sugar or preservatives. The label should read simply “peanuts and salt”.
  • Crisp rice cereal. I used Barbara’s organic brown rice crisps cereal for this recipe, but classic Rice Krispies cereal or your favorite brand will work as well.
  • Maple syrup. Substitute with honey if desired.
  • Oil. I used melted coconut oil for this recipe, but it may be substituted with whatever type of oil that you have on hand.
  • Vanilla. The vanilla extract is optional, but it adds a nice depth of flavor.
  • Chocolate chips. Use dairy-free chocolate chips to make these vegan rice krispie treats, or substitute with whatever you have on hand.
  • Flaky sea salt. The flaky sea salt is completely optional, but it accentuates the flavor of the dark chocolate and really takes them over the top.

  1. Combine the peanut butter, maple syrup, coconut oil and vanilla extract in a medium bowl.
  2. Add the crisp rice cereal and stir gently until well coated.
  3. Spread the peanut butter rice crispy mixture into a parchment or foil lined 8×8″ pan.
  4. Spread melted dark chocolate and flaky sea salt over the top, then chill for 3 hours or until set.

Ingredients

  • 1 cup peanut butter natural preferred
  • 1/3 cup maple syrup or sub with honey
  • 1/4 cup melted coconut oil or sub with your favorite oil or melted butter
  • 1 teaspoon vanilla extract
  • 2.5 cups crisp rice cereal regular or brown rice cereal
  • 1/2 cup dark chocolate chips dairy-free or regular
  • 1 teaspoon flaky sea salt optional

Instructions 

  • Line an 8×8" square baking dish with parchment paper or foil and set aside.
  • Place the peanut butter in a medium bowl and microwave for 30 seconds until loosened enough to stir easily. Add the maple syrup, coconut oil and vanilla and stir well to combine.
    1 cup peanut butter, 1/3 cup maple syrup, 1/4 cup melted coconut oil, 1 teaspoon vanilla extract
  • Add the brown rice cereal and stir until well coated with the peanut butter mixture.
    2.5 cups crisp rice cereal
  • Pour the mixture into the prepared dish and spread evenly.
  • Place the chocolate in a small bowl and microwave in 30 second increments, stirring after each one until it's completely melted. Pour the chocolate over the peanut butter mixture and spread in a thin, even layer. Top with flaky sea salt and chill for a minimum of 2 hours or overnight. Cut into bars, then serve and enjoy!
