This is a delicious twist on the classic with cool, crisp romaine hearts and a creamy, herbaceous green goddess dressing.

It includes classic ingredients like crispy bacon, juicy cherry tomatoes, a creamy crumbled blue cheese, and it’s finished with freshly chopped chives.

It’s one of the easiest summer salad recipes that is also restaurant quality, and you can do most of the prep in advance.

The romaine hearts are even easier to cut and prep than ice berg lettuce, too. Just halve them, pile on the toppings and drizzle with the dressing.

Recipe ingredients

This wedge salad with romaine hearts includes just a few simple ingredients. Make sure to use the freshest romaine and tomatoes, along with quality blue cheese for maximum flavor.

  • Romaine hearts. Romaine hearts are the tender, crunchy inner leaves of romaine lettuce, and they’re generally sold in packs of 3 and are ready to use. They’re very crisp, light in color, and mild and sweet in flavor. If you wish to purchase whole heads of Romaine, simply remove the dark outer leaves prior to using them for the wedge salads.
  • Bacon. Plan on one slice of bacon per serving, cooked according to package instructions. Or cook the bacon using my air fryer bacon recipe.
  • Cherry tomatoes. Halve the cherry tomatoes, or use 2 medium tomatoes, remove the seeds, and dice them.
  • Blue cheese. Use good quality blue cheese for the best flavor. Sub with gorgonzola, roquefort or feta if you’re not a fan of the strong flavor.
  • Fresh chives. The freshly chopped chives add color and mild onion flavor. Sub with freshly chopped scallions, parsley or your favorite fresh herbs as desired.

What’s the difference between a romaine wedge salad and a classic wedge?

A classic wedge salad includes ice berg lettuce, while a romaine wedge includes crisp hearts of romaine for more flavor and crunch.

Romaine hearts are even easier to cut than ice berg lettuce as well. Simply halve them, pile on the toppings, and drizzle with dressing!

Is romaine lettuce more nutritious than ice berg lettuce?

Romaine lettuce is rich in Vitamins A and K, and has a bit more fiber and potassium than ice berg lettuce. It’s definitely more nutritious, and it has more flavor as well.

Can I make this salad in advance?

I don’t recommend assembling the salads in advance as you want to keep the romaine lettuce as crisp as possible.

That said, you can certainly cook the bacon and prep the dressing and other ingredients up to a day or so ahead of time and store them in the refrigerator separately until you’re ready to assemble the wedge salads.

What is a good substitute for blue cheese?

Gorgonzola, goat cheese or feta cheese are all great substitutes for blue cheese. You can even use freshly grated parmesan cheese in a pinch.

Romaine Wedge Salad

This Romaine Wedge Salad is crisp, refreshing and topped with crumbled bacon, blue cheese, cherry tomatoes and green goddess dressing. It's so easy and is always a crowd pleaser!

Ingredients

  • 6 slices bacon cooked; see note 2
  • 3 romaine hearts dark outer leaves removed as necessary and halved lengthwise
  • 1 cup cherry tomatoes halved
  • 1/2 cup crumbled blue cheese sub with gorgonzola, roquefort or your favorite cheese
  • green goddess dressing see note 3
  • 1/4 cup chopped fresh chives for serving

Instructions 

  • Line a plate with paper towels. Place the bacon in the paper towels and blot to remove excess grease, then chop or crumble it when it's cool enough to handle.
    6 slices bacon
  • Place the halved romaine hearts on a platter. Drizzle each with dressing, then top with the blue cheese, bacon and halved cherry tomatoes. Drizzle with a bit more dressing, then season with freshly ground black pepper and garnish with the chopped chives. Serve immediately and enjoy!
