One day I paired it with leftover sweet potatoes and bell peppers, and I loved the flavors so much that I immediately began working on this easy Sheet Pan Sausage, Peppers and Sweet Potatoes recipe.
The savory flavor of the sausage pairs beautifully with the sweetness of the caramelized sweet potatoes, bell peppers and red onion.

Recipe ingredients
There are minimal ingredients in this easy sheet pan meal. The sausage and a simple spice blend provide a ton of savory flavor, which is balanced perfectly by the sweet, caramelized flavor of the sweet potatoes, bell peppers and onions.
These ingredients can definitely be substituted based on your preferences or what you have on hand.
- Sausage. This recipe was developed using fresh Italian sausage, but you can use any type of fresh or fully cooked sausage. Bratwurst, chorizo, chicken or turkey sausage are all great options. The cooking time and nutrition information will vary based on the type of sausage that you’re using.
- Sweet potatoes. You’ll need about 1 lb. of sweet potato. Be sure to cut it in small 1/2″ thick chunks so that it will cook quickly. Sub the sweet potatoes with regular potatoes as desired.
- Bell peppers. I used red and yellow bell peppers for added color and sweet flavor, but any variety will work. Poblano peppers or other soft vegetables can be substituted as well.
- Red onion. The onion is sweet and caramelized once cooked. Be sure to cut it into large cubes as it will burn if it’s in small pieces. Not a fan of onion? Simply omit it and sub with more veggies as desired.
- Spice blend. A simple blend of garlic powder, smoked paprika and Italian seasoning add smoky, savory flavor to the vegetables.
- Olive oil. Essential to promote browning and helps keep the vegetables from sticking to the sheet pan.

Fresh Italian sausage can be substituted with bratwurst, chorizo, or turkey and chicken sausage. Fully cooked sausage in any flavor works great as well, just keep in mind that the cooking time will be much shorter.
Leaner sausages like chicken and turkey have much less fat so they will take a bit less time to cook and will result in a dish with lower fat and cholesterol.
Leave fresh sausage whole (and definitely don’t poke holes in it either) as all the juices will run out as it roasts, leaving it very dry in the end.

- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon black pepper or to taste
- 2 tablespoons olive oil
- 1 lb. sweet potato about 2 medium; cut into 1/2" cubes
- 2 bell peppers cut into 1" chunks
- 1 small red onion cut into 1" chunks
- 1.5 lbs. fresh Italian sausage about 5 or 6 depending on size; see note 1
Instructions
- Preheat the oven to 400 degrees. Combine the garlic powder, smoked paprika, Italian season, salt and pepper in a small bowl, then add the olive oil and stir until incorporated.1 teaspoon garlic powder, 1 teaspoon smoked paprika, 1 teaspoon Italian seasoning, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 2 tablespoons olive oil
- Place the sweet potato, bell peppers and red onion on a large rimmed baking sheet. Drizzle the olive oil spice mixture over the vegetables and toss well to coat. Arrange the vegetables in a single layer.1 lb. sweet potato, 2 bell peppers, 1 small red onion
- Nestle the Italian sausages into the vegetables, then place in the oven. Roast for 20-30 minutes until the internal temperature of the sausage is 160 degrees, turning halfway during the cooking time for even browning.
