Happy New Year! I hope you enjoyed your holidays…I certainly did. I’m more than ready to get back on track by eating healthier and getting back to my exercise routine.
Since my overnight oats recipes have been in the top 10 every year since I started making them, I thought it was appropriate to kick off the new year with these Coconut Cream Pie Chia Overnight Oats.
Because pie in overnight oat form is just a fun way to start the day.
And there’s coconut!
Coconut Cream Pie Chia Overnight Oats
I realize these might look like they’re topped with whipped cream, but you and I know these wouldn’t be healthy if that were the case.
The “cream” factor here is none other than high protein plain Greek yogurt to give us the fuel we need to start the day.
I placed a dollop on top for effect because it has to look like cream pie, right?
As always, I’ve also included chia seeds in this recipe because they’re a nice thickening agent if you will. They’re also packed with nutrients like fiber, magnesium, potassium, and protein to name a few, which makes me want to add them to everything.
It takes all of 5 minutes to prep these the night before, then in the morning you can stir the Greek yogurt and coconut and just enjoy.
You can prep these ahead by making these on the weekend and placing them in jars, making them the perfect grab and go breakfast.
Top them with toasted coconut flakes, your favorite fruit, sliced almonds — anything goes!
These Coconut Cream Pie Chia Overnight Oats will definitely give you your coconut cream pie fix without weighing you down.

Equipment
Ingredients
- 2 cups old fashioned rolled oats
- 2 tablespoons chia seeds
- 2 1/2 cups refrigerated coconut milk such as So Delicious, or your favorite milk
- 4 tablespoons maple syrup or your favorite sweetener
- 1 cup plain Greek yogurt*
- 1/3 cup sweetened shredded coconut
- Serve with coconut flakes sliced almonds or fruit!
Instructions
- Place the oats, chia seeds, coconut milk, and maple syrup in a large bowl and stir to combine. Cover with plastic wrap and chill for a minimum of 3 hours or overnight.
- Stir in the Greek yogurt and shredded coconut.
- Serve with toppings of your choice and enjoy!
Notes
- *I prefer to use plain yogurt to control the sweetness, but if you'd rather use sweetened Greek yogurt, simply omit the maple syrup.
- Prep your oats ahead and store in jars or containers in the fridge for the perfect grab 'n go breakfast!

Thank You for sharing your recipe ! I make this often and it is by far the most favorite of any recipe I have previously tried. I have a question tho, how long is it safe to store in the fridge before consuming ? I use airtight mason jars for portioning and sometimes it doesn’t get eaten quite as fast as others.

I finally made overnight oat! I used this recipe and it was okay. I didn’t find the exact coconut milk. I’m currently living in Mexico and used a different brand and the coconut flakes were fresh verses a store brought brand that already has a shelf life. I’ll play around with it a bit more. I did add a touch of cinnamon and that helped. Thanks for the inspiration.

This sounds yummy! But if you can’t eat oats, I guess you could just delete them and add more chia seeds to make it a chia pudding?
You should definitely look for a chia pudding recipe instead – this is totally different.
I just tried this and it is really good, has tapioca texture which I love.
It says 4 servings but that seems like an awful lot. Would you advise how much you measure per serving? I’m afraid of eating too much chia (if ya know what i mean).
Hi Lisa — glad you like the oats! If you divide this recipe into 4 servings, you’d get 1/2 cup oats and 1/2 tablespoon chia seeds. I’d suggest dividing the oats into 6 servings for 1 teaspoon of chia seeds if 1/2 tablespoon sounds like a lot to you. Hope that helps!

No! You don’t have to divide it at all. If you’re worried about eating too much portioning the oats out into individual containers/jars is a good way to prep them.
Just made a batch of this treat. I used vanilla yogurt and just a squeeze of truvia syrup. Went ahead and stirred in the unsweetened coconut and divided it all into 5 glass bowls with lids. Hope it’s yummy, long time til morning to find out!

It’s a miracle! Something my picky (if it’s healthy I won’t eat it) 15-year old stepson actually wants to eat for breakfast on school mornings! In fact, the whole family eats these now (I don’t like the yogurt so I just remove my portion before they add it). This is such a great idea. I’m not stuck buying greasy food in the work cafeteria anymore because I don’t have time to cook in the morning. Thanks for sharing!!

I was excited to try this recipe but was disappointed that it was much more like a bowl of cold porridge rather than coconut cream pie. 🙂 I ended up warming it up, adding some more milk as well as quite a few blueberries. Which was okay if you like porridge – which I don’t really. Thanks for sharing though!

This may be a stupid question, but do you eat the overnight oats cold?
Hi, Nicole, and it’s not a stupid question at all! Yes, overnight oats are typically eaten cold, but you can certainly microwave them for a bit to warm them up if you prefer. I would suggest trying them cold to see how you like it first!
