It doesn’t get any more fresh and vibrant than this Spring Mix Salad! It’s packed with crisp spring lettuce, shaved carrot, peppery radish, creamy avocado and sunflower seeds. It’s tossed in a flavorful honey mustard dressing and it comes together in minutes!

It’s a delicious mix of spring veggies, crunchy sunflower seeds, and is the perfect vehicle for the honey mustard dressing that I can’t get enough of.
Like my butter lettuce salad and asparagus salad, it’s extremely easy to put together. It’s also versatile enough to serve as a side dish with just about anything, or topped with your favorite protein.

Ingredient notes:
- Spring mix lettuce. The spring lettuce, also known as mesclun, is the foundation of this delicious salad. If you’re not familiar with it, it’s a blend of tender, baby lettuces such as red and green leaf, spinach, frisée, arugula, purple radicchio and more. There are so many delicious varieties on the market, each with their own unique blend of lettuces.
- Vegetables. There is a delicious array of spring vegetables in this salad, including carrot, radish and avocado. I’ve shaved the carrot with a vegetable peeler for a pretty presentation, but they may simply be sliced thinly like the radish as well.
- Sunflower seeds. Raw sunflower seeds are added for a bit of crunchy texture and flavor. You can certainly use roasted and salted or sub them with your favorite nuts or seeds if desired.
- Dressing. I adore this salad with my tangy, sweet honey mustard dressing. My lemon vinaigrette and balsamic vinaigrette dressing recipes are great options as well, or you can use your favorite store bought brand.
How to make spring green salad
This spring green salad is incredibly easy to prepare as it contains just a few ingredients and minimal prep.

- Place the spring mix lettuce in a bowl. You can toss the lettuce with the shaved carrot ribbons in advance if desired.
- Add the radish, avocado and sunflower seeds when you’re ready to serve it.
- Toss with enough honey mustard dressing to coat (or use your favorite), and serve immediately.

- 4 large radish sliced thinly
- 1 medium carrot shaved with a vegetable peeler or sliced thinly
- 1 avocado pitted and cut into chunks
- 1/3 cup sunflower seeds raw or roasted
- honey mustard dressing or your favorite
Instructions
